Ingredients

  • For the Shrimp

    • 1 pound medium raw shrimp

    • salt

    • freshly ground black pepper

    • 1 tablespoon neutral oil

  • For the Creamy Garlic Sauce

    • 2 tablespoons butter

    • 4 cloves garlic

    • ½ cup dry white wine

    • 1 cup heavy cream

    • ½ teaspoon salt

    • ¼ teaspoon freshly ground black pepper

    • ¾ cup grated fresh parmesan

    • finely chopped fresh parsley

Instructions

  1. Step 1

    Place 1 pound medium raw shrimp on a cutting board. Sprinkle salt and freshly ground black pepper over shrimp to taste, then flip and season the other side. Set aside.

    Add 1 tablespoon neutral oil to a large skillet over medium-high heat. Warm until hot and shimmery.

  3. Step 3

    Add shrimp to the skillet in one layer. Cook undisturbed for 1-2 minutes, then flip. Cook 1 minute more, or until opaque, pink, and slightly curled.

  4. Step 4

    Transfer shrimp to a medium bowl and set aside.

    Reduce heat to medium, let the pan cool slightly, then add 2 tablespoons butter. Melt completely.

  6. Step 6

    Add 4 cloves minced garlic. Stir and sauté until fragrant, about 30 seconds.

    Pour ½ cup dry white wine into the skillet to deglaze. Stir well, scraping up browned bits, until liquid is reduced by 50%.

    Reduce heat to medium-low, let cool slightly. Remove from heat, add 1 cup heavy cream, and stir.

    Return to medium-low heat, simmer, stirring occasionally. Add ½ teaspoon salt and ¼ teaspoon pepper. Remove from heat.

    Add ¾ cup grated fresh parmesan. Stir until incorporated, then return to heat. Simmer until melted and thickened, about 1 minute.

    Sprinkle finely chopped fresh parsley into the sauce. Return shrimp to the skillet and spoon sauce over to coat.

    Serve immediately over mashed potatoes, pasta, or rice.

Additional Notes

Dry white wine such as Sauvignon blanc or Pinot Grigio is recommended. Chicken or vegetable broth, or homemade shrimp stock can be used as alcohol-free substitutes. For a keto version, use broth instead of wine and fresh parmesan (avoid pre-packaged).
